Oatmeal, Peanut Butter Crusted Brownies
An Easy-to-Make Crowd Pleaser - Fudge-like Brownies

For the Crust
  1. 1 ½ cup old-fashioned (not quick) oats
  2. ¾ cup flour
  3. ¾ firmly packed brown sugar
  4. 1/4 cup chopped walnuts
  5. ¼ teaspoon baking soda
  6. ¼ teaspoon salt
  7. ½ cup butter
  8. ¼ cup peanut butter (I use Skippy creamy)
  9. For the Brownie/Chocolate Part (Baker’s One Bowl Brownie)
  10. 4 ounces (the entire box) of Baker’s (that’s the brand) unsweetened chocolate
  11. ¾ cup (1 ½ sticks) butter
  12. 2 cups of white sugar
  13. 3 eggs
  14. 1 teaspoon vanilla
  15. 1 cup flour
Make Crust First
  1. Combine oats, flour, brown sugar, ¼ cup nuts, baking soda and salt. Melt together butter and peanut butter, then add to oat mixture. Mix until well mixed and crumbly. Press in 9 x 13” pan.
  2. Bake at 350 F for 10 minutes.
Brownie/Chocolate Part (Baker's One Bowl Brownie Recipe)
  1. Microwave the chocolate and butter in large bowl on high for 2 minutes, or until butter is melted. Remove from microwave and stir until the chocolate is completely melted.
  2. Stir sugar into chocolate, until well blended. Stir in eggs and vanilla, until completed mixed. Then, mix in flour until well blended. Spread gently (you don’t want the crust to lift into chocolate mix) on top of crust.
  3. Bake for 30-35 minutes (I sometimes only bake for 27 minutes), or until toothpick inserted in center comes out with fudgy crumbs. DO NOT OVERBAKE. They will be gooey and fudge-like. They are great warm with vanilla ice cream as a more formal dessert.
  1. This is such an easy recipe. Anyone who likes the taste of peanut butter (it's not gooey peanut butter) and chocolate will die for this one! I don't actually put any nuts in the brownies (the original Baker's recipe calls for nuts), as I think the crust is enough to compliment the chocolate. If you heat these up and add some vanilla or coffee ice cream, it will push it over the top! Happy baking!
