Ghirardelli's Ultimate Double Chocolate Cookies
Decadent, divine chocolate goodness! These cookies are like little molten cookies because they have so little flour and are mostly made of chocolate. Eat them fresh out of the oven with your favorite ice cream (for me that would be a coffee ice cream, but a high-quality vanilla bean would be great too). Easy to make and definite chocolate lovers paradise.

Ingredients
  1. 12 ounces Ghirardelli Semi-Sweet Chocolate Chips
  2. 10 ounces Ghirardelli 60% Cacao Bittersweet Chocolate Chips
  3. 6 tablespoon(s) unsalted butter
  4. 3 eggs
  5. 1 cup sugar
  6. 1/3 cup all-purpose flour
  7. 1/2 teaspoon baking powder
  8. 1 cup chopped walnuts
Instructions
  1. In double boiler over hot water, melt bittersweet chocolate chips and butter.
  2. In large bowl with electric mixer or whisk, beat eggs and sugar until thick; stir into chocolate mixture.
  3. In small bowl, stir together flour and baking powder; stir into chocolate mixture.
  4. Gently mix in semi-sweet chocolate chips and walnuts.
  5. Using a sheet of plastic wrap, form dough into two logs (I often do 3 so it's more manageable to roll), each 2 inches in diameter and about 12 inches long.
  6. As dough will be quite soft, use plastic wrap to hold dough in log shape.
  7. Wrap tightly; refrigerate at least 1 hour or until firm.
  8. Heat oven to 375°F.
  9. Unwrap dough; with sharp knife, cut into 3/4 inch slices.
  10. Place slices 1 1/2 inches apart on greased or parchment-lined cookie sheet.
  11. Bake 12 to 14 minutes or until shiny crust forms on top but interior is still soft.
  12. Cool on baking sheet; store in airtight tin up to 1 week.
