Chewy Raisin Walnut Shortbread Bars
These bars are a raisin and walnut lovers dream! The top is chewy goodness with a shortbread crust. So easy to make and a joy to eat.

  1. 1 1/4 cups all-purpose flour
  2. 1/2 cup sugar
  3. 1/2 cup butter or margarine
  4. 2 eggs
  5. 1/2 cup firmly packed brown sugar
  6. 1 teaspoon vanilla
  7. 1/8 teaspoon baking soda
  8. 1 cup chopped walnuts
  9. 1 cup raisins
  10. 1/2 cup flaked coconut (optional - I don't use it)
  1. Heat oven to 375 F
  2. Lightly grease 8-inch square pan.
  3. Combine flour and sugar.
  4. Using pastry blender or fork (I use a fork), cut in butter until mixture resembles fine meal (I'm usually too impatient to wait for the butter to soften enough and mix well-enough to form fine meal, but it still comes out delish).
  5. Press into greased pan.
  6. Bake for 20 minutes or just until edges are lightly golden.
  7. Meanwhile, combine eggs, brown sugar and vanilla; beat well.
  8. Stir in baking soda, walnuts, raisins and coconut.
  9. Spoon over hot crust; spread to cover evenly.
  10. Return to oven; bake an additional 20 to 25 minutes or until top is set.
  11. Cool completely.
  12. Cut into 20 bars (or maybe if you like hearty portions, 9).
